Citrus Fruit Salad With Lemon Honey Dressing

Ingredients
  Flavored gelatin 1 Ounce (Lemon / Lime / Orange Flavored)
  Boiling water 1 Cup (16 tbs)
  Salt 1 Dash
  Grapefruit juice 1⁄2 Cup (8 tbs)
  Orange juice 1⁄2 Cup (8 tbs)
  Diced grapefruit 2 Cup (32 tbs)
  Grapefruit sections 4
  Watercress sprig 3
  Sliced strawberries 1 Cup (16 tbs)
Directions

Method 1 Dissolve gelatin in 1 cup boiling water.
Cool.
Pour into 8" x 10" oblong pyrex dish 2" deep, slightly greased with oil.
Add a dash of salt, the grapefruit juice, orange juice, diced grapefruit, diced strawberries (if desired), and a few sprigs of water cress.
Chill until firm.
Cut into squares, remove from dish with spatula or pancake turner, and place on crisp lettuce leaves.
Garnish with additional water cress and grape fruit sections and serve with lemon-honey dressing.
Method 2 Dissolve gelatin in 1 cup boiling water.
Cool.
Add salt and fruit juices.
Pour thin layer of dissolved gelatin in mold slightly greased with oil.
Chill until firm.
Arrange grapefruit and a few sprigs of water cress on gelatin, cover with additional gelatin and chill until firm.
Arrange strawberries on top and around sides and cover completely with remaining gelatin.
Chill until firm.
Unmold, garnish with additional water cress and grapefruit sections and serve with lemon-honey dressing.
