Strawberry Chicken Salad
|Fat free mayonnaise||1⁄2 Cup (8 tbs)|
|Chopped prepared chutney||2 Tablespoon|
|Grated lime peel||1 Teaspoon|
|Curry powder||1 Teaspoon|
|Lime juice||1 Tablespoon|
|Diced cooked chicken||2 Cup (32 tbs)|
|Sliced celery||1 Cup (16 tbs)|
|Chopped red onion||1⁄4 Cup (4 tbs)|
|Fresh strawberries||1 1⁄2 Pint, stemmed, divided|
In large bowl mix mayonnaise, chutney, lime peel, salt, curry powder and lime juice.
Add chicken, celery and onion; toss, cover and chill.
Just before serving, slice 1 pint of the strawberries and gently toss with chicken mixture.
To assemble salad, line platter or individual serving plates with lettuce.
Mound chicken mixture in center.
Garnish with remaining, whole strawberries.
