Artichoke Salad With Caper Dressing

Ingredients
  Frozen artichokes 9 Ounce (1 Package)
  Mock sour cream 1⁄4 Cup (4 tbs) (Fat-Free Sour Cream)
  Fat free mayonnaise 1⁄4 Cup (4 tbs) (Kraft / Miracle Whip)
  Capers 3 Tablespoon, drained and chopped
  Lemon juice 1 Teaspoon
  Dijon mustard 2 Teaspoon
  Butter lettuce head 2 (Boston Bibb)
  Green pepper 1 , cut into bite size strips
  Non fat cottage cheese 8 Ounce
  Lemon juice 1 Tablespoon
  Fat free plain yogurt 1 Tablespoon
Directions

Place all of the above ingredients in a blender and blend until smooth.
Reserve the remainder for future use.Cook frozen artichoke hearts according to package directions.
Drain; cover and chill in the freezer for 15 minutes.
Meanwhile, in a mixing bowl stir together Mock Sour Cream, fat-free mayonnaise, capers, lemon juice, and mustard.
Line 4 salad plates with bibb lettuce leaves.
Arrange artichoke hearts and pepper strips atop lettuce.
Drizzle mayonnaise dressing over artichokes and peppers.
