Citrus Shrimp Salad

Ingredients
  Water 2 1⁄2 Quart
  Medium shrimp 2 Pound
  Reduced calorie italian salad dressing 1⁄4 Cup (4 tbs)
  Finely chopped shallots 3 Tablespoon
  Red wine vinegar 2 Tablespoon
  Fat free plain yogurt 2 Tablespoon
  Orange juice 2 Tablespoon
  Dijon mustard 1 1⁄2 Tablespoon
  Honey 1 Tablespoon
  Pepper 1⁄8 Teaspoon
  Sliced romaine lettuce 4 Cup (64 tbs)
  Pink grapefruit sections 2 Cup (32 tbs) (From 4 Large Grapefruit)
  Oranges sections 2 Cup (32 tbs) (From 5 Oranges)
  Chopped fresh chives 1⁄4 Cup (4 tbs)
Directions

Bring water to a boil and add shrimp.
Cook shrimp 3 to 5 minutes.
Drain and rinse with cold water.
Peel and devein shrimp; chill.
Combine salad dressing and next 7 ingredients in a large bowl, and stir well.
Stir in shrimp.
Line a large platter with lettuce.
Spoon shrimp mixture into center of platter; arrange grapefruit sections and orange sections around salad.
Sprinkle with chives.
