Grape Bulgur Wheat Salad
|Bulgur wheat||1 Cup (16 tbs)|
|Grapes||3 Cup (48 tbs), rinsed, cut into half, and seeded if desired|
|Chopped red onion||2⁄3 Cup (10.67 tbs)|
|Finely shredded orange peel||2 Teaspoon|
|Orange juice||1 Cup (16 tbs)|
|Chopped fresh mint leaves||1⁄3 Cup (5.33 tbs)|
|Lemon juice||3 Tablespoon|
|Ground coriander||1 Teaspoon|
|Romaine lettuce leaves||4 , rinsed and crisped|
1. In a large bowl, combine bulgur and 2 cups boiling water. Let stand until bulgur is tender to bite, about 30 minutes. Pour into a fine strainer to drain.
2. Return bulgur to bowl. Add grapes, onion, orange peel, orange juice, mint, lemon juice, and coriander. Mix, and season to taste with salt and pepper.
3. Line a platter or wide bowl with romaine leaves. Mound salad on leaves.
