Grape Bulgur Wheat Salad

Ingredients
  Bulgur wheat 1 Cup (16 tbs)
  Grapes 3 Cup (48 tbs), rinsed, cut into half, and seeded if desired
  Chopped red onion 2⁄3 Cup (10.67 tbs)
  Finely shredded orange peel 2 Teaspoon
  Orange juice 1 Cup (16 tbs)
  Chopped fresh mint leaves 1⁄3 Cup (5.33 tbs)
  Lemon juice 3 Tablespoon
  Ground coriander 1 Teaspoon
  Romaine lettuce leaves 4 , rinsed and crisped
  Salt To Taste
  Pepper To Taste
Directions

1. In a large bowl, combine bulgur and 2 cups boiling water. Let stand until bulgur is tender to bite, about 30 minutes. Pour into a fine strainer to drain.
2. Return bulgur to bowl. Add grapes, onion, orange peel, orange juice, mint, lemon juice, and coriander. Mix, and season to taste with salt and pepper.
3. Line a platter or wide bowl with romaine leaves. Mound salad on leaves.
