Halibut Fruit Salad
|Canned mandarin orange sections||10 1⁄2 Ounce (1 Can, Water Packed)|
|Canned pineapple tidbits in juice||8 Ounce (1 Can)|
|Cooked halibut/Cusk / shark / sole / tuna||12 Ounce, chilled|
|Reduced calorie mayonnaise/Salad dressing||1⁄4 Cup (4 tbs)|
|Plain yogurt||1⁄4 Cup (4 tbs)|
|Curry powder||3 1⁄2 Teaspoon|
|Apple||1 Medium, cored and chopped|
|Coconut||1⁄4 Cup (4 tbs), toasted|
Chill the cans of orange sections and pineapple tidbits in the refrigerator till needed, then drain before using.
Break or cut fish into large chunks.
For salad, in a large mixing bowl combine mayonnaise or salad dressing, yogurt, and curry powder.
Add orange sections, pineapple, and apple.
Toss lightly to coat.
Add fish, then toss lightly again.
