Orange Watercress Salad
|Torn bibb lettuce||7 Cup (112 tbs)|
|Trimmed watercress||2 Cup (32 tbs)|
|Sliced green onions||1⁄4 Cup (4 tbs)|
|Fresh orange juice||6 Tablespoon (1/4 Cup Plus 2 Tablespoons)|
|Tarragon vinegar||2 Tablespoon|
|Extra virgin olive oil||2 Teaspoon|
|Dry mustard||1⁄2 Teaspoon|
|Oranges sections||2 Cup (32 tbs) (About 4 Oranges)|
|Chopped pistachios||2 Tablespoon|
Combine first 3 ingredients in a large bowl; toss gently.
Combine juice and next 4 ingredients in a small bowl, stirring with a whisk; drizzle over let-tjuce.
Place 1 cup lettuce rnixture on each of 8 salad plates; top with orange sections and pistachios.
