Shrimp Endive & Avocado Salad With Mustard Mayonnaise
|Mayonnaise||3⁄4 Cup (12 tbs)|
|Mustard seeds||2 Teaspoon|
|Curry powder||1⁄4 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
|Ripe avocado||1 Large|
|Cooked unshelled shrimp/3/4 pound tiny cooked, shelled shrimp||1 Pound (12 To 15 Colossal Sized Pieces)|
|Belgian endive head/12 to 15 small inner romaine lettuce leaves, washed||1 Large|
Stir together mayonnaise, mustard seeds, cumin, and curry powder; set aside.
To assemble plates, spoon 1/3 of the mayonnaise directly in center of 3 dinner plates (or spoon into small bowls and set on plate).
Pit, peel, and slice avocado.
Arrange avocado, shrimp, and endive on each plate.
Let each person shell shrimp to dip in sauce and eat with endive and avocado
