Egg Salad In Tomato Accordions

Ingredients
  Hard-cooked eggs 6 , chopped
  Finely chopped celery 1⁄2 Cup (8 tbs)
  Diced green pepper 1⁄3 Cup (5.33 tbs)
  Thinly sliced green onions 1⁄3 Cup (5.33 tbs)
  Prepared mustard 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Salad dressing/Mayonnaise 1⁄4 Cup (4 tbs)
  Tomatoes 6 Medium
Directions

Combine eggs, celery, green pepper, onions, mustard, salt, and pepper.
Add salad dressing; mix.
Chill.
Turn tomatoes stem end down.
Without cutting to bottom, cut down, making 6 slices.
Sprinkle cut surfaces with salt.
Fill between slices with egg salad.
Arrange on crisp salad greens.
Garnish with parsley.
