Green Papaya Salad
|Unripe green papaya||300 Gram, peeled and cut into very fine matchsticks, juliennes|
|Green birds eye chilies/4 hot green chilies||7|
|Garlic||5 Clove (25 gm)|
|Dried roasted peanuts||2 Tablespoon, roughly crushed|
|Dried shrimps||1 Tablespoon, chopped|
|Large cherry tomatoes/1 large tomato, cut into slices||6 , quartered|
|Lime juice||3 Tablespoon|
|Chopped palm sugar||1 Tablespoon|
|Fish sauce||1 Tablespoon|
Take a few chillies and garlic and pound roughly in a mortar and pestle or process very briefly in a blender.
Set aside in a bowl and repeat until all the chillies and garlic are used up.
Mix in the raw papaya.
Stir in the peanuts, dried shrimps and tomato, mix well.
Make a paste of the palm sugar (can substitute with jaggery), fish sauce and lime juice.
Add to the papaya mixture.
