Grilled Citrus Chicken With Cucumber Orange Salad
|Orange juice||1⁄2 Cup (8 tbs)|
|Lime juice||2 Tablespoon|
|Garlic||2 Clove (10 gm), minced|
|Canola oil||1 Tablespoon|
|Thin-sliced chicken breast cutlets||1⁄4 Pound (4 Pieces)|
|Cucumber||1 , peeled and diced|
|Orange||1 , peeled and diced|
|Red bell pepper||1 , seeded and diced|
|Sliced black olives||3⁄4 Cup (12 tbs)|
1. Combine the orange juice, lime juice, garlic, oil, and salt in a small bowl. Pour half the mixture into a large bowl and add the chicken. Turn to coat.
2.. Spray a nonstick ridged grill pan with nonstick spray and place over medium-high heat. Remove the chicken from the marinade, discard the marinade, and place the chicken on the grill pan. Cook until the chicken is cooked through, about 3 minutes on each side.
3. Meanwhile, toss the cucumber, orange, bell pepper, and olives with the remaining orange juice mixture.
