Cauliflower Avocado Salad

Ingredients
  Cauliflower head 1 Medium
  Avocado dip 1⁄2 Cup (8 tbs)
  Leaf lettuce 4
  Shredded monterey jack cheese 1 Cup (16 tbs)
Directions

Trim outer leaves from cauliflower; slice off stem end so cauliflower rests evenly when placed upright on a flat surface.
Heat 1 inch salted water ( 1/2 teaspoon salt to 1 cup water) to boiling.
Add cauliflower.
Heat to boiling; reduce heat.
Cover and cook until tender, 20 to 25 minutes; drain.
Cover and refrigerate cauliflower at least 3 hours.
Prepare Avocado Dip.
Place cauliflower on lettuce-lined platter.
Spread avocado mixture over cauliflower; serve with cheese.
