Blueberry Orange Salad
|Orange juice||2 Cup (32 tbs)|
|Orange flavor gelatin||6 Ounce (1 Package)|
|Sugar||1⁄4 Cup (4 tbs)|
|Grated lemon rind||1 Teaspoon|
|Buttermilk||2 Cup (32 tbs)|
|Fresh blueberries||2 Cup (32 tbs)|
|Lettuce leaves||6 (For Serving)|
Oil a 6-cup mold.
Bring the orange juice to a boil in a large saucepan over medium heat.
Remove from the heat and add the gelatin, sugar and lemon rind; stir until the gelatin is dissolved.
Refrigerate the mixture until it is the consistency of unbeaten egg whites.
Stir in the buttermilk and mix well; fold in the blueberries.
Pour into the prepared mold and refrigerate until set.
Unmold onto lettuce leaves and serve.
