Curly Cukes And Radish Salad
|Seedless cucumbers||2 Medium|
|Radishes||10 , thinly sliced|
|Fresh jalapeno pepper||1 , seeded and sliced|
|Snipped fresh basil||2 Tablespoon|
|Olive oil||1 Tablespoon|
|White wine vinegar||1 Tablespoon|
Trim ends of cucumbers.
Using a sharp vegetable peeler, slice cucumbers length-wise into wide, flat ribbons.
Discard first and last slices.
In a medium bowl combine cucumber ribbons, radishes, jalapeno pepper, basil, sugar, and salt.
Drizzle the olive oil and vinegar over cucumber mixture; toss gently to coat.
Transfer to a serving bowl.
