Quinoa Salad

A great healthy salad
  Carrots 1
  Vegetable broth 1 Cup (16 tbs)
  Quinoa 1 Cup (16 tbs)
  Garlic 1 Tablespoon
  Olive oil 2 Tablespoon
  Lettuce leaves 3
  Red cabbage 1 Ounce
  Pepper 7 Ounce

1. Boil the Broth
2. Add the quinoa
3. cook on low heat for 20 minutes
4. Take out and reserve the quinoa
5. Cut the cabbage, peppers and slice the carrot
6. Mix all the stuff and add olive oil
7. Now add the quinoa mix too
8. Serve to hungry foodies

Quinoa is wonderful and so healthy BUT do NOT forget to rinse it to remove the bitterness or you might not like it so much. Quinoa is a blank canvas to create a culinary artistry.

Quinoa, a grain of South America, is virtually unknown in the Mediterranean, except as an exotic ingredient by Europeans who perhaps have traveled to South America, so what makes this "Mediterranean?"

Maybe they thought it was because they used olive oil? The poster is in Thailand. I adore quinoa especially with saffron, but it is South American for sure. I even make a Thai dish using quinoa but the grain is still from South America. I did a blogg on it. Here is my Thai recipe-just scroll down in the comments. Shanti/Mary-Anne
