Green Bean And Feta Saute
|Cooking spray||1 Tablespoon|
|Sliced green beans||1 Cup (16 tbs) (1 Inch)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Red bell pepper strips||1⁄2 Cup (8 tbs)|
|Crushed red pepper||1 Dash|
|Canned quartered artichoke hearts||1⁄2 Cup (8 tbs), drained|
|Canned vegetable broth/Chicken broth||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Teaspoon|
|Finely crumbled feta cheese||1⁄2 Ounce (2 Tablespoon)|
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
Add green beans, onion, bell pepper, and crushed red pepper; saute 3 minutes.
Add artichokes and broth; cook about 30 seconds or until liquid is reduced to 2 tablespoons.
Stir in lemon juice; sprinkle with cheese.
