Lemon Mushroom Salad

Ingredients
  Fresh lemon juice 2 Tablespoon
  Olive oil 3 Tablespoon (Preferably Extra-Virgin)
  Garlic 1 Clove (5 gm), minced
  Minced fresh parsley 2 Tablespoon
  Chopped fresh oregano/1/4 teaspoon dried 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Fresh mushrooms 1 Pound, thinly sliced
Directions

1. In a medium bowl, combine lemon juice, olive oil, garlic, parsley, oregano, salt, and pepper. Beat with a fork to blend.
2. Add mushrooms and toss to coat with dressing.
