Spinach And Black Bean Salad

  Canned black beans 15 Ounce, rinsed and drained (1 Can)
  Snipped dried apricots 1⁄2 Cup (8 tbs)
  Chopped sweet pepper 1⁄2 Cup (8 tbs) (Red / Yellow / Both)
  Green onion 1 , thinly sliced
  Snipped cilantro 1 Tablespoon (Fresh)
  Garlic 1 Clove (5 gm), minced
  Apricot nectar 1⁄4 Cup (4 tbs)
  Salad oil 2 Tablespoon
  Rice vinegar 2 Tablespoon
  Soy sauce 1 Teaspoon
  Grated fresh ginger 1 Teaspoon
  Shredded spinach 4 Cup (64 tbs)

In a large bowl combine the black beans, apricots, sweet pepper, green onion, cilantro, and garlic.
For dressing, in a screw-top jar combine apricot nectar, oil, vinegar, soy sauce, 'and ginger.
Cover and shake well.
Pour the dressing over the bean mixture; toss gently to coat.
Cover and chill for 2 to 24 hours.
