Ingredients
  Black eyed peas 16 Ounce (Or 2 Cup Frozen)
  Chicken stock 1⁄4 Cup (4 tbs) (Fat Free/Low Salt)
  Frozen corn kernels 1 Cup (16 tbs) (Thawed If Frozen)
  Plum tomatoes 2 , diced
  Red onion 3⁄4 , minced
  Serrano pepper 1 , minced
  Chopped cilantro 2 Tablespoon
  Olive oil 1 Teaspoon
  Garlic 4 Clove (20 gm), minced
  Lime juice 1 Teaspoon
  Balsamic marinade 1⁄4 Cup (4 tbs)
  Cumin 1 Teaspoon
  Hot pepper sauce 2 Teaspoon
  Creole seasoning 1 Teaspoon
Directions

Follow package instructions to cook black-eyed peas in 1/4 cup chicken stock; cool.
Combine all ingredients.
Allow to marinate at least one hour.
