Arugula Tomato And Olive Salad

Ingredients
  Garlic 1 Clove (5 gm), minced
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Chopped fresh oregano/1/2 teaspoon dried 2 Teaspoon
  Red wine vinegar 3 Tablespoon
  Extra virgin olive oil 1⁄3 Cup (5.33 tbs)
  Ripe tomatoes 1 Pound (2 Large Ones)
  Arugula/1 small head of curly endive 8 Ounce
  Oil cured black olives 1⁄2 Cup (8 tbs)
  Red onion 1 Small, thinly sliced
Directions

1. In a large bowl, combine garlic, salt, pepper, oregano, vinegar, and olive oil. Beat with fork to blend.
2. Cut each tomato into 8 wedges. Toss tomatoes, arugula, olives, and onion together in bowl with dressing.
