Warm Spinach Salad With Chicken And Apples

Ingredients
  Skinned boned chicken breast halves 8 Ounce (Two 4 Ounce Pieces)
  Salt 1⁄8 Teaspoon
  Cooking spray 1
  Chopped red delicious apple 1 Cup (16 tbs)
  Lemon juice 1 Tablespoon
  Chicken broth 1⁄2 Cup (8 tbs)
  Cornstarch 1 Tablespoon
  Apple jelly 1 1⁄2 Tablespoon
  Apple juice 1 Tablespoon
  Olive oil 2 Teaspoon
  Cider vinegar 1 Teaspoon
  Garlic clove 1 Small, minced
  Spinach leaves 6 Cup (96 tbs)
  Chopped radicchio 1 Cup (16 tbs)
  Grated fresh parmesan cheese 2 Tablespoon
Directions

1. Sprinkle chicken with 1/8 teaspoon salt. Coat a nonstick skillet with cooking spray, and place over medium-high heat until hot. Add chicken; cook 4 minutes on each side or until done. Slice chicken into thin strips; set aside, and keep warm. Combine apple and lemon juice; toss well. Drain and set aside.
2. Combine broth and cornstarch; stir with a whisk until well blended. Add broth mixture to skillet; bring to a boil, and cook 1 minute, stirring constantly. Reduce heat to medium; add jelly and next 5 ingredients, stirring well. Add spinach and radicchio; cook 2 minutes or until spinach slightly wilts. Place spinach mixture on plates; top with chicken and apple, and sprinkle with cheese
