Denver Brunch Sandwich
|Milk||1⁄3 Cup (5.33 tbs)|
|Mayonnaise/Salad dressing||1⁄3 Cup (5.33 tbs)|
|Chopped pimento||1⁄4 Cup (4 tbs)|
|Chopped green pepper||3 Tablespoon|
Place bacon slices between paper napkin or in 1 1/2 quart (10 x 8 ) glass baking dish.
Microwave on high for 7 to 9 minutes or until bacon is crisp.
Remove bacon; drain drippings; crumble bacon; set aside.
Combine eggs, milk and mayonnaise in medium mixing bowl; beat well with rotary beater.
Stir in bacon and remaining ingredients.
Pour into baking dish.
Cover with plastic wrap.
Microwave on medium for 6 to 7 minutes or until center is almost set.
Garnish with tomato slices.
Let stand, covered, 5 minutes before serving.
