Watercress Endive Orange Salad

Ingredients
  Salad oil 2 Tablespoon
  Cider vinegar 4 Teaspoon
  Olive oil 1 Tablespoon
  Dijon style mustard 1 Tablespoon
  Honey 1⁄2 Teaspoon
  Watercress/Bibb lettuce 1 1⁄4 Bunch (125 gm), torn (Large Bunch)
  Belgian endive head 3 , cut diagonally into thin strips
  Oranges 2 Medium, peeled and thinly sliced
Directions

For dressing, in screw-top jar combine salad oil, vinegar, olive oil, mustard, and honey Cover; shake well, On individual plates arrange watercress or Bibb lettuce, endive, and orange slices, Drizzle dressing over salad.
Garnish with snipped parsley, if desired.
