Cheese & Wurst Salad
|Water||1 Cup (16 tbs)|
|Swiss cheese||1⁄4 Pound|
|Thinly sliced celery||1⁄2 Cup (8 tbs)|
|Diced sweet pickle||1⁄2 Cup (8 tbs)|
|Diced green pepper||1⁄2 Cup (8 tbs)|
|Red onions||2 Small, thinly sliced and separated into rings|
|Hard-cooked eggs||2 , sliced|
|Mustard dressing||2 Tablespoon|
Place wurst in a pan with enough water to cover; bring to a boil, reduce heat, and simmer for 10 minutes.
Remove sausage from water and set aside to cool.
Peel and discard casings, if desired.
Slice meat and cheese into julienne strips about 3 inches long.
Combine celery, pickle, and green pepper.
Place wurst, cheese, celery mixture, onion rings, and egg slices in a salad bowl.
Cover and chill, if made ahead.
Prepare mustard dressing.
To serve, mix dressing evenly into salad
