Smoked Tenderloin Salad

Ingredients
  Orange juice 1⁄2 Cup (8 tbs)
  Olive oil/Vegetable oil 2 Tablespoon
  Cider vinegar 2 Tablespoon
  Grated orange peel 1 Tablespoon
  Honey 2 Teaspoon
  Dijon mustard 2 Teaspoon
  Coarsely ground pepper 1⁄2 Teaspoon
  Pork tenderloin 1 Pound, trimmed (1 Standard)
  Torn salad greens 10 Cup (160 tbs)
  Seedless oranges 2 , peeled and sliced
  Chopped pistachios/Cashews 1⁄4 Cup (4 tbs)
Directions

In a small bowl, combine all dressing ingredients; cover and chill.
Grill pork, covered, over medium coals for 15-20 minutes or until meat thermometer reads 160°-170°, turning occasionally.
Let stand for 5 minutes; thinly slice tenderloin.
