Hot Spinach Salad With Bacon

Ingredients
  Bacon strip 5 , cut in 3/4-inch pieces
  Red wine vinegar 1 1⁄2 Tablespoon
  Dry mustard 1⁄4 Teaspoon
  Sugar 1⁄4 Teaspoon
  Spinach 1 1⁄4 Pound, broken into bite-size pieces (1 Bunch)
  Salt To Taste
  Pepper To Taste
Directions

In the kitchen, cook bacon in chafing dish or frying pan over medium-high heat until crisp.
Remove from heat, lift out bacon, and drain; crumble bacon into a small bowl.
Discard all but 2 tablespoons drippings.
Combine vinegar, sugar, and mustard in a small bowl; blend well.
At the table, place chafing dish over high heat to warm bacon drippings.
Place 1/2 the spinach in chafing dish and mix gently, lifting greens from pan bottom to coat leaves with drippings.
As spinach wilts, add more greens and toss to coat leaves evenly.
Add vinegar mixture to spinach and season with salt and pepper to taste; sprinkle bacon over and serve.
