Potato Salad With Beef
|Red beets||1⁄2 Pound (Small Sized Ones)|
|New potatoes||1 Pound|
|Young herring fillets||2 (Matje Fillets)|
|Beef roast||1⁄2 Pound|
|Black pepper||1 Pinch (Generous Pinch)|
|Sour cream||1 Cup (16 tbs)|
|Chopped chives||3 Tablespoon|
Thoroughly wash the beets and cook 40 minutes covered over low heat.
Cook the washed potatoes 30 minutes.
€¢ According to their saltiness soak the matjes fillets up to 30 minutes.
Pat them dry and cut into strips.
Dice the meat.
Cut the apples into eighths, core, peel and slice thinly.
Peel and chop the onion.
Mash the anchovies.
Mix in the drained capers, vinegar, sugar and pepper.
If desired add 1 teaspoon oil from the can of anchovies.
Drain the beets and potatoes and allow to cool somewhat.
Peel and slice thinly.
Mix with the prepared ingredients and the anchovy sauce.
Stir the sour cream and fold into the salad.
Cover and marinate at least 30 minutes.
Before serving sprinkle the chives over the salad.
