Spicy Black Bean Salad

Ingredients
  Black beans 4 Cup (64 tbs), rinsed and drained (Prepared)
  Lime juice 3 Tablespoon, freshly squeezed
  Olive oil 2 Tablespoon
  Red wine vinegar 1 Tablespoon
  Salt 1 Teaspoon
  Cayenne pepper 1⁄2 Teaspoon
  Scallions 2 , chopped
  Chopped fresh cilantro 1⁄4 Cup (4 tbs)
  Red bell peppers 2 , chopped (Fresh / Roasted)
Directions

1. Place the beans in a medium-sized ceramic or glass bowl and add lime juice, olive oil, vinegar, salt, and cayenne, and mix until well combined.
2. Top with scallions, cilantro, and peppers, but do not combine.
3. Cover and refrigerate for at least 2 hours to let the flavors meld.
4. Toss just prior to serving.
