Tofu Egg Salad

Ingredients
  Hard cooked eggs 2 , chopped
  Firm tofu 1⁄2 Pound, drained and crumbled
  Stalk celery 1 , finely chopped
  Scallions 2 , finely chopped
  Chopped parsley 1 Tablespoon
  Wheat germ 2 Tablespoon
  Turmeric 1⁄4 Teaspoon
  Dijon mustard 1 Teaspoon
  Celery seed 1⁄4 Teaspoon
  Homemade mayonnaise 1 Cup (16 tbs)
Directions

Combine all the ingredients in a bowl using just enough mayonnaise to make the mixture hold together.
Use as a sandwich filling, stuffing for tomatoes, or as a salad on lettuce with alfalfa sprouts.
