Summer Salad

Ingredients
  Finely sliced raw spinach 2 Cup (32 tbs)
  Cucumber slices 1 1⁄2 Cup (24 tbs) (Peeled)
  Sliced green onions 1⁄3 Cup (5.33 tbs) (Including Some Of The Tops)
  Sliced radish 1⁄2 Cup (8 tbs)
  Creamed cottage cheese 1 Pint (2 Cups)
  Commercial sour cream 1 Cup (16 tbs)
  Lemon juice 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Freshly ground pepper To Taste
  Paprika 1 Teaspoon (For Garnish)
  Parsley 1 Teaspoon (For Garnish)
Directions

In a bowl combine sliced spinach, sliced cucumbers, onions, and radishes; toss together lightly.
Arrange on 4 individual salad plates or in wooden salad bowls.
In center of each serving, place a mound of cottage cheese.
Blend together sour cream, lemon juice, salt, and pepper, and pour over the salads.
Sprinkle top of each salad with a little paprika and chopped parsley, if you wish
