Combination Salad With Browned Butter
|Butter||1⁄4 Pound (1/2 Cup)|
Arrange lettuce leaves on individual plates or large chop plate.
Slice tomatoes (which should be cool but not cold), and arrange in lettuce cups; sprinkle with salt and pepper.
Halve avocados, peel, and cut each half into 3 lengthwise slices.
Arrange over tomato slices.
Slice green onions, including part of the green tops, and sprinkle over tomatoes and avocado.
Just before serving, pour over hot butter which has been lightly browned over low heat.
The butter partially cooks the onion and wilts the lettuce.
