Ham N Cheese Potato Salad's picture
This Ham and Cheese Potato Salad is one of my most favorite accompaniments with pasta and rice meals. Try this creamy salad with vegetables and spicy seasonings for your next meal. Don't forget to let me know if you've liked this Ham and Cheese Potato Salad.
  Red potatoes 1⁄2 Pound
  Mayonnaise 1 Cup (16 tbs)
  Sour cream 1⁄2 Cup (8 tbs)
  Dijon mustard 2 Tablespoon
  Celery seed 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Cheddar cheese 8 Ounce, cubed
  Monterey jack cheese 8 Ounce, cubed
  Diced fully cooked ham 2 Cup (32 tbs)
  Chopped fresh tomatoes 3⁄4 Cup (12 tbs)
  Sliced green onions 1⁄4 Cup (4 tbs)
  Minced fresh parsley 1⁄4 Cup (4 tbs)

In a saucepan, cook potatoes in boiling salted water until tender; drain and cool.
Meanwhile, in a large salad bowl, combine mayonnaise, sour cream, mustard, celery seed, salt and pepper; mix well.
Cut potatoes into cubes.
Add to mayonnaise mixture and toss to coat.
Add remaining ingredients; mix well.
Cover and refrigerate for at least 2 hours.
