Kiwi Lime Chicken Salad
|Diced cooked chicken||1 1⁄2 Cup (24 tbs)|
|Cooked brown rice||2 Cup (32 tbs)|
|Sunflower oil||2 Tablespoon|
|Lime juice||1 1⁄2 Tablespoon|
|Lemon juice||1 Teaspoon|
|Dry mustard||1⁄4 Teaspoon|
|Kiwi fruit||1 , peeled and sliced|
|Mint sprig||1 (For Garnish)|
Place the chicken and rice in a large bowl.
Combine the oil, lime and lemon juices, honey, mustard, and turmeric in a small bowl or jar with lid.
Stir or shake until well combined.
Pour the dressing over the chicken and rice and toss to combine.
Add the sliced kiwi fruit and toss again, gently.
Chill, if desired, before serving.
