Grape Salad Mold
|Lemon flavor gelatin||9 Ounce (Three 3 Ounce Packages)|
|Boiling water||2 1⁄2 Cup (40 tbs)|
|Seedless red grapes||1⁄2 Pound|
|Seedless green grapes||1⁄2 Pound|
|Cottage cheese||16 Ounce (1 Container)|
1. In medium-sized bowl, stir 2 packages lemon-flavor gelatin with 2 1/2 cups boiling water until gelatin completely dissolves. Refrigerate until mixture mounds slightly when dropped from a spoon, about 1 hour. Mean while, cut each red and green grape in half.
2. Fold grapes into thickened gelatin mixture; pour into 6-cup ring mold. Cover and refrigerate until almost set, about 30 minutes.
3. In small bowl, stir remaining package of lemon-flavor gelatin with 1/2 cup boiling water until it completely dissolves. In blender at high speed, blend gelatin mixture and cottage cheese until smooth. Pour cottage-cheese mixture over gelatin layer in mold. Cover and refrigerate until set, at least 3 hours.
