Cantaloupe & Beef Salad
|90% lean ground beef||1 Pound (Extra Lean)|
|Chopped fresh mint/1 tablespoon dried leaf mint||3 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Freshly ground pepper||To Taste|
|Cantaloupe balls||4 Cup (64 tbs)|
|Cubed jicama||1 Cup (16 tbs)|
|Creamy reduced calorie italian dressing||1⁄2 Cup (8 tbs)|
|Torn lettuce leaves||8 Cup (128 tbs)|
Brown ground beef in medium skillet.
Add mint and garlic; cook 2 minutes, stirring constantly.
Season with salt and pepper to taste.
Combine ground beef mixture, cantaloupe and jicama in serving bowl; stir in dressing.
Add lettuce; toss lightly.
