Herring And Vegetable Salad
|Salted herrings||2 (Filleted)|
|Cooked potatoes||3 Medium, chopped|
|Cooked beet||1 Small, peeled and chopped|
|Cooking apples||2 , peeled, cored and chopped|
|Onion||1 Small, finely chopped|
|Gherkins||4 , finely chopped|
|Hard boiled eggs||2|
|Salad oil||3 Tablespoon|
|Ground black pepper||1|
Cut the herring fillets into small pieces.
Reserve a few pieces for garnish.
In a bowl which has been rinsed with cold water, combine herring, potatoes, beet, apples, onion, gherkins and one chopped hard boiled egg.
Mix ingredients well and add salad oil, vinegar, salt and pepper.
Press together firmly and unmold on a flat dish.
Cover with a thin layer of mayonnaise and garnish with remaining pieces of herring, egg slices and lettuce leaves.
