Rainbow Pepper Pasta Salad

Ingredients
  Farfalle 6 Ounce (Bow Tie Pasta)
  Red pepper 1 Large, seeded and chopped
  Yellow pepper 1 Large, seeded and chopped
  English cucumber 1⁄2 , seeded and chopped
  Shallots 2 Tablespoon, peeled and finely chopped
  Feta cheese 5 Ounce
  Kalamata olives 2 Ounce, pitted and chopped
  Basil leaves 1⁄2 Cup (8 tbs), chopped
  Italian parsley 1⁄2 Cup (8 tbs), chopped
  Red wine vinegar 1 Tablespoon
  Extra virgin olive oil 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Cook pasta in large pot of boiling, salted water, following cooking instructions on package. Drain, rinse with cold water and drain again. In a bowl, mix together remaining ingredients and pasta. Taste, and season with salt and pepper if desired. Cover and refrigerate overnight. Serve cold.
