Cucumber Salad With Parsley
|Cucumbers||1 1⁄2 Pound|
|Parsley||2 Tablespoon, chopped|
The fat field, or ridge, cucumbers make the best salads.
Peel the cucumbers and slice them very thinly, the thinner the better.
Arrange them in layers in a deep dish and sprinkle over the salt.
Leave for 2 hours for the moisture to come out.
Pour away the liquid.
Rinse and drain the cucumber.
Mix the vinegar, water, pepper, and sugar together and pour over the cucumbers.
Sprinkle with chopped parsley.
