Cucumber salad with peanut powder

A quick cucumber salad with peanuts powder
Ingredients
  Cucumber/2 small cucumber 1 Large
  Peanuts 100 Gram
  Sugar 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Coriander leaves 1 Cup (16 tbs)
  Oil 1 Teaspoon
  Mustard seeds 1⁄2 Teaspoon
  Green chilli 1 , cut into small pieces
Directions

Peel the cucumber and cut it into small pieces.

Roast the peanuts on low flame in a pan till they change colour and crush them to powder in a mixer (No need to remove the skin. This gives a nice dark brown colour to the powder). Remember the mixer should be completely dry.

Heat oil in a pan, add mustard sides, allow them to splutter, then add green chillies, curry leaves.

Add the cut cucumber, salt and sugar, fry for a minute and turn off the gas.

Put corainder and serve hot.
