Grapefruit And Avocado Salad
|Ripe avocados||2 Large, halved and stoned|
|Lemon juice||2 Teaspoon|
|Grapefruit||1 Large, peeled, pitted and roughly chopped|
|Chicory head||1 , trimmed, washed and chopped|
|French dressing||3 Tablespoon|
Using a teaspoon, carefully scoop out the avocado flesh and place it in a medium sized mixing bowl.
Reserve the avocado shells.
Add 1 teaspoon of the lemon juice, the chopped grapefruit, chicory [French or Belgian endive] and sugar and, using a fork, mash the ingredients carefully together until they form a relatively smooth mixture.
Stir the dressing into the avocado mixture.
Spoon the mixture into the avocado shells and sprinkle over the remaining lemon juice.
Place the filled avocados in the refrigerator and chill them for 30 minutes.
Remove the filled avocado shells from the refrigerator and serve them immediately.
