Chicken Salad With Celery
|Cooked and cubed chicken||1 3⁄4 Cup (28 tbs)|
|Diagonally sliced celery/Cooked celery root cut in sticks||1 Cup (16 tbs)|
|Onion||1 Small, minced|
|Lemon juice||3 Tablespoon|
|Slivered almonds||1⁄2 Cup (8 tbs), toasted|
|Pimento stuffed olives||12 , sliced|
|Grapes||1 Cup (16 tbs), halved and seeded|
|Canned mandarin orange||1 Small, drained (1 Can)|
|Mayonnaise||3⁄4 Cup (12 tbs)|
Combine chicken, celery and onion in a bowl; sprinkle lemon juice over mixture, season to taste and toss gently to mix ingredients.
Chill in refrigerator about 1 hour.
When ready to serve, add almonds, olives, grapes and mandarin oranges.
Gently toss with enough mayonnaise to moisten ingredients.
