|Heart of romaine||1|
|Tomatoes||3 Medium, cubed|
|Cucumbers||2 , peeled and diced|
|Green bell pepper||1|
|Onion||1 Medium, chopped|
|Finely chopped fresh parsley||4 Tablespoon|
|Mint/2 teaspoon dried mint||1 Tablespoon, finely chopped|
|Garlic||1 Clove (5 gm), mashed with a pinch of salt|
|Olive oil||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Pita bread||1 , toasted and cut into small pieces|
Combine and toss gently in a wooden salad bowl the lettuce, the vegetables, the parsley, and the mint.
Mix the mashed garlic, olive oil, lemon juice, and salt and pepper; add to salad and toss well.
Chill for approximately 1 hour before serving.
