1. Combine the ham, cottage cheese, pepper, and salt.
2. Arrange thin slices of cucumber around the edge of a large platter and cut the rest into 'A inch dice.
3. Put the diced cucumber, celery, apples, and carrots into a bowl, add the lemon juice, and mix well. Arrange on the platter, put lettuce leaves in the center, and place the ham and cheese mixture on top.
4. Cut the eggs in halves lengthwise and arrange on top. Place a sprig of parsley or watercress in the center.
