Sweet And Sour Red Cabbage And Apple Salad
|Head red cabbage||1 Medium, sliced|
|Tart apple||1 Large, peeled, cored, and cut into 1/2 inch cubes|
|Sweet green pepper||1 Small, cored, seeded, and sliced lengthwise into strips about 1/4 inch wide|
|Yellow onion||1 Small, chopped|
|Red wine vinegar||1⁄2 Cup (8 tbs)|
|Caraway seeds||1⁄2 Teaspoon|
|Ground black pepper||1⁄2 Teaspoon|
|Ground cloves||1⁄2 Teaspoon|
In a large heatproof bowl, combine the cabbage, apple, green pepper, and onion and toss well to mix; set aside.
In a small saucepan over moderate heat, cook and stir the vinegar, honey, caraway seeds, black pepper, and cloves until the mixture just begins to boil about 1 minute.
Pour the hot mixture over the salad and toss well.
Let stand at room temperature for 30 minutes before serving.
