Spiced cucumber and sweet red pepper salad is a mixed veggie salad. Flavorful and crispy fresh, this salad is dressed with yogurt and spiced with ginger, cumin and coriander. Chilled and tossed to serve, this vegetable salad goes well with spicy and savory meals.
Low fat plain yogurt
1⁄4 Cup (4 tbs)
Peanut oil/Oriental sesame oil
Minced ginger/1/8 teaspoon ground ginger
Ground coriander/Ground cumin
1 Large, peeled, halved lengthwise, seeded, and cut into matchstick strips
Sweet red pepper
1 Small, cored, seeded, and cut into matchstick strips
In a medium size bowl, combine the yogurt, sesame oil, vinegar, ginger, cumin, and coriander.
Add the cucumber and red pepper and toss well.
Cover and chill in the refrigerator for 2 to 3 hours, tossing occasionally.
