Mixed Fruit Salad

Mixed fruit salad is a fresh minted fruit salad. Made with a medley of fruits, the salad is dressed with yogurt flavored with orange juice, rind and honey. Chilled and tossed to serve, this salad is juicy and sweet.
  Cantaloupe 1 Medium, halved, seeded, sliced 1/4 inch thick, and peeled
  Navel oranges 2 Medium, peeled and cut into 1/2 inch cubes
  Bananas 2 Medium, peeled, sliced, and sprinkled with 2 teaspoons lemon juice to prevent darkening
  Sliced strawberries 1 Cup (16 tbs)
  Seedless green grapes 1 Cup (16 tbs)
  Low fat plain yogurt 3⁄4 Cup (12 tbs)
  Orange juice 1⁄3 Cup (5.33 tbs)
  Honey 1 Tablespoon
  Grated orange rind 1 1⁄2 Teaspoon
  Minced mint 1 Tablespoon

Arrange the cantaloupe, oranges, bananas, strawberries, and grapes attractively on a large platter.
Cover with plastic wrap and chill in the refrigerator until ready to serve.
In a small bowl, whisk together the yogurt, orange juice, honey, orange rind, and if you like, the mint.
Transfer to a small pitcher and chill until ready to serve.
At serving time, pass the dressing separately.
