Mixed Fruit Salad
|Cantaloupe||1 Medium, halved, seeded, sliced 1/4 inch thick, and peeled|
|Navel oranges||2 Medium, peeled and cut into 1/2 inch cubes|
|Bananas||2 Medium, peeled, sliced, and sprinkled with 2 teaspoons lemon juice to prevent darkening|
|Sliced strawberries||1 Cup (16 tbs)|
|Seedless green grapes||1 Cup (16 tbs)|
|Low fat plain yogurt||3⁄4 Cup (12 tbs)|
|Orange juice||1⁄3 Cup (5.33 tbs)|
|Grated orange rind||1 1⁄2 Teaspoon|
|Minced mint||1 Tablespoon|
Arrange the cantaloupe, oranges, bananas, strawberries, and grapes attractively on a large platter.
Cover with plastic wrap and chill in the refrigerator until ready to serve.
In a small bowl, whisk together the yogurt, orange juice, honey, orange rind, and if you like, the mint.
Transfer to a small pitcher and chill until ready to serve.
At serving time, pass the dressing separately.
