Ingredients
  Lobster meat 6 Cup (96 tbs), diced and chilled
  Hard-cooked eggs 3 , mashed through a sieve
  Scallion 1 Large, minced
  Leek 1 Small, finely chopped
  Tarragon 2 Teaspoon
  Thyme 1⁄2 Teaspoon
  Garlic 2 Clove (10 gm), crushed in a garlic press
  Mayonnaise 2 Cup (32 tbs)
  Capers 1 Tablespoon
  Lemon 1 , juiced
  Cucumber 1 , sliced paper thin
  Tomato wedges 3 (For Garnishing)
Directions

1. Combine all ingredients except cucumber and tomato. Adjust seasoning.
2. Spoon into heated pastry shells, a lobster cavity, or on a bed of lettuce. Garnish with cucumber slices and tomato wedges.
