This Lobster Salad tastes amazing ! Try this mixed seafood and vegetable accompaniment with herb, cucumber ,mayonnaise and garlic seasonings for your next meal ! Your suggestions for this Lobster Salad are welcome !
|Lobster meat||6 Cup (96 tbs), diced and chilled|
|Hard-cooked eggs||3 , mashed through a sieve|
|Scallion||1 Large, minced|
|Leek||1 Small, finely chopped|
|Garlic||2 Clove (10 gm), crushed in a garlic press|
|Mayonnaise||2 Cup (32 tbs)|
|Lemon||1 , juiced|
|Cucumber||1 , sliced paper thin|
|Tomato wedges||3 (For Garnishing)|
1. Combine all ingredients except cucumber and tomato. Adjust seasoning.
2. Spoon into heated pastry shells, a lobster cavity, or on a bed of lettuce. Garnish with cucumber slices and tomato wedges.
