Carrot Raisin Salad
|Raw carrots||3 Cup (48 tbs), shredded|
|Raisins||1⁄2 Cup (8 tbs)|
|Blender mayonnaise||1⁄4 Cup (4 tbs)|
|Yogurt||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Tablespoon|
|Chopped soy nuts||1⁄3 Cup (5.33 tbs)|
|Peanuts||2 Tablespoon (For Garnishing)|
In medium sized bowl, combine shredded carrots and raisins.
In a small bowl, combine mayonnaise, yogurt, lemon juice, honey and salt; blend together.
Pour dressing over carrot raisin mixture and mix together thoroughly.
Chill before serving.
Line a serving dish with greens; spoon salad in center and sprinkle soy nuts or chopped peanuts over top and serve.
