Gingered Pear Salad

Ingredients
  Canned pear halves in juice 8 1⁄2 Ounce, undrained (1 Can)
  Sugar free lemon gelatin 1 Tablespoon (4 Serving Size Jello Brand)
  Boiling water 3⁄4 Cup (12 tbs)
  Lemon juice 2 Teaspoon
  2% low fat cottage cheese 8 Ounce (1 Cup)
  Salt 1⁄8 Teaspoon
  Ground ginger 1⁄8 Teaspoon
Directions

Drain pears, reserving juice; set juice aside.
Finely chop pears; set aside.
Dissolve gelatin in boiling water; add lemon juice.
Add enough ice cubes to reserved pear juice to measure 1 cup.
Add to gelatin; stir until slightly thickened.
Remove any unmelted ice; pour gelatin into blender container.
Add cottage cheese, salt and ginger; cover.
Blend until smooth.
Stir in pears.
Pour into 3 individual plastic containers or serving dishes.
Chill until firm, about 2 hours.
