Gingered Pear Salad
|Canned pear halves in juice||8 1⁄2 Ounce, undrained (1 Can)|
|Sugar free lemon gelatin||1 Tablespoon (4 Serving Size Jello Brand)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Lemon juice||2 Teaspoon|
|2% low fat cottage cheese||8 Ounce (1 Cup)|
|Ground ginger||1⁄8 Teaspoon|
Drain pears, reserving juice; set juice aside.
Finely chop pears; set aside.
Dissolve gelatin in boiling water; add lemon juice.
Add enough ice cubes to reserved pear juice to measure 1 cup.
Add to gelatin; stir until slightly thickened.
Remove any unmelted ice; pour gelatin into blender container.
Add cottage cheese, salt and ginger; cover.
Blend until smooth.
Stir in pears.
Pour into 3 individual plastic containers or serving dishes.
Chill until firm, about 2 hours.
