Fruit Salad With Lemon Syrup
|Lemon juice||50 Milliliter|
|Pineapple||1⁄2 , cut in to chunks|
|Chopped mint||2 Tablespoon|
|Strawberries||250 Gram, trimmed and halved|
|Bananas||2 , sliced|
|Desiccated coconut||3 Tablespoon|
Combine the lemon juice, water and sugar in a saucepan.
Bring to the boil, stirring, then simmer for 2 minutes.
Pour the syrup into a jug, allow to cool, then chill.
Combine the bananas, pineapple and strawberies in a bowl.
Cut the passionfruit in half and scoop the pulp into the bowl.
Pour the chilled syrup over the fruit, add the mint and coconut and mix well.
